Nutrition: What I eat during a day

Many of you have requested a post about my ‘diet’, what I eat during the day and how much I work out. First of all I have to say I don’t have a specific diet and in general I eat more or less everything I want, but with moderation. I try to eat my meals every 3-4 hour with healthy snacks between. I also try to not eat food that is too heavy after 7.00 pm as your metabolism usually is slower at night. This can be quite difficult while living in Paris since French people (including my boyfriend) tend to have very late dinners. I always eat dark whole-grain bread and I try to cut down carbs like pasta, rice, white bread etc. I quit drinking soda in mid April and I have no plans of starting drinking it again, actually I’m fine with just water. When it comes to alcohol I don’t drink much either, sometimes I have a glass of wine in during the week and in the weekends, if I go out, I drink a couple of glasses. When it comes to exercising I try to go to the gym a couple of times a week, if I don’t work out during the day I try to walk a lot and do some pilates at home.

When it comes to food and nutrition I think one of the most important things is to listen to your body, and I believe that if you learn to listen long and hard enough to your body, you will become more aware of your own capacity to react to hunger and satiety. I always eat slowly as well, it takes about 15-20 minutes for your stomach to send the message to the brain that you are full.

So, here’s what I would typically eat during a day:

Breakfast:
I prefer a salty breakfast over a sweet, even though I love croissaints I’m not a huge fan of the ‘typical’ French breakfast. A typical breakfast for me usually contains of dark whole grain bread or the typical Scandinavian crisp bread. It depends on the bread but usually two slices is more than enough for me, I eat it like and open sandwich – like most Norwegians. On the bread I like to vary a lot, but the favorites are cheese (Emmental/Jarlsberg) with red peppers, ham with low fat mayonnese and cucumber (or tomato), cottage cheese with blueberry or raspberry jam. I also like to eat a boiled egg (sometimes on the bread) with my breakfast as well as a natural yoghurt from Activia. Unless I’m in Brazil where fresh juice is easily available I usually just stick with water. I also drink a coffee (espresso), with milk in it. Once in a while I also like to make a oatmeal porridge with fresh berries/fruits for breakfast.

Lunch:
I eat lunch around 13.00 – 14.00 and a typical lunch for me is either a big salad, sushi or a whole grain sandwich – cold food. I never eat a lot for lunch, while sometimes in Paris if I eat with French friends, the lunch tend to be quite big and I replace it with my dinner. For lunch I usually also just drink water.

Dinner:
For me, the ideal time for dinner is between 18.00 and 20.00, a typical Norwegian dinner is usually at 16.00 – 17.00 which is too early for me now, while the French dinner is too late – 21.00 – 22.30 pm. I grew up by the sea and my family love fish, so I’ve been eating a lot of fish my whole life. The ideal dinner for me is fresh fish with vegetables and a small portion of potatoes or whole grain pasta/rice. I’m not too picky and eat more or less everything, I love Thai, Mexican and Japanese food. I try to cut down on the fast carbs and saturated fat – white rice, pasta, potatoes and sauce. I almost never eat fried food, not only is it really bad for your health but I think it’s quite disgusting as well.

Snack:
I always eat snack between my meals and they usually consist of fruits, veggies, yoghurt, smoothie or nuts. I often make fruit salads (love it) or I make a vegetable and dip platter. I also try to drink a lot of water and green tea during the day. I never eat desert during the week and I also try to only eat sweets during the weekend. I’m a huge fan of sweets though so I don’t always manage to eat it just in the weekend,

    I think too, the most important thing is to listen to the own body! If you know your body pretty well, you recognize what it needs right now at what not… and you’ll never have the munchies for something and you maintain your weight.

I think you have a very good nutrition and I hope to improve mine. I love fruit and vegetable, but unfortunately I like chocolate and coca light too ;-).
